Stuffed mushroom

Check out this SUPER easy Stuffed Mushroom recipe!  You won’t believe  how quick and easy it is to make.  You can purchase the mushroom caps at Costco.

Mix together:

1/2 cup Mozzarella cheese, part-skim
3/4 cup Parmesan cheese, grated
3/4 cup Ricotta cheese, reduced-fat

Place on top of a bed of Spinach in the mushroom cap. In a separate bowl mix together:

3/4 cup Basil, fresh leaves
1 Garlic clove, small
2 tbsp Parsley, fresh
2 tbsp Olive oil
1/8 tsp Pepper
3 tbsp toasted pecans

Place a tomato slice on top of the cheese mixture and grill covered 8-10 minutes.  Remove from oven or grill and drizzle the olive oil mixture over the tomato slice.  EAT!
