Harvest Breakfast Cookies

  • 1 c. pecan pieces
  • 1 c. Whole-wheat flour
  • 1 tsp. baking powder
  • 1 tsp. cinnamon
  • 1/4 tsp. salt
  • 1/2 c. maple syrup
  • 1/3 c. coconut oil
  • 1 lg. egg
  • 1 tsp. vanilla
  • 1 c. rolled oats
  • 1 medium apple unpeeled, cut into 1/4″ pieces
  • 1 c. fresh cranberries (0r frozen unthawed)
  • 1/4 c. dried cranberries

Preheat oven to 350, toast pecans 8 minutes, let cool.  Mix dry ingredients together in one bowl, mix wet ingredients in another bowl.  Add dry to wet ingredients and use an ice cream scoop to make 8 cookies.  Bake 20 – 25 minutes
