Avocado Chicken Salad

Avocado Chicken Salad served on Kale, tomato and cucumber salad

  • 2 chicken breasts baked and shredded
  • 1 1/2 avocado mashed
  • 1/4 c. full fat mayo
  • mix all together
  • season with pink Himalayan salt, garlic powder, onion powder, fresh lemon juice
  • Serve on a bed of kale, chopped tomato and cucumber
  • Drizzle lemon oil and Harvest Fig infused balsamic vinegar
  • (Seriously, I made this in 10 minutes–it’s yummy, healthy AND easy!)
