Healthy vegan cookie dough for spooning or dipping!
- 1 can chickpeas (garbanzo beans)
- 1 cup cacao chips (vegan)
- 1/2 cup creamy peanut butter
- 1/4 cup pure maple syrup
- 1/2 tsp vanilla extract
Blend chickpeas for 2 whole minutes in food processor or high-powered blender.
Add peanut butter, maple syrup and vanilla and blend until smooth, scraping down sides as needed.
Scoop into bowl, add chocolate chips and serve or press into pan and keep refrigerated for bars. Double this recipe to fill an 8 X 8 pan or use a loaf pan for single recipe.
This dough keeps well for quite a while in sealed container in the fridge.
