Ok, it might not look pretty, but it tasted AMAZING! So easy too!
1/2 c. cacao powder
2 c. almond flour
1 tsp. baking powder
20 fresh dates, pitted and soaked in hot water for 10 minutes
1 tsp vanilla extract
1/3 c. coconut oil
5 eggs
3 T. honey
1 c. huckleberries (or any other berries you prefer)
Directions Preheat oven to 350 degrees. Grease a round 9" cake tin and line it with parchment paper. Set aside. In a bowl ix the almond flour, cacao powder and baking powder. Set aside.
Drain the dates and place in a food processor. Whiz until smooth. Add the eggs, honey, vanilla extract and coconut oil and process until well combined. Add the almond flour mixture and process until just combined. Gently fold in the berries. Pour the batter into the prepared cake tin and bake for 50 - 55 minutes or until a toothpick inserted into the center comes out clean.
