Back in September when I visited Tuscany, Italy, one of the first cool things we learned all about was how to make sourdough bread!
I wondered why these Italians literally ate bread with every meal, yet were all so thin. Not only did we learn how to make the bread, we learned why it's such an integral part of their daily diet....turns out it's because it's GOOD for gut health!!
The process of fermentation has been proven to be beneficial for good gut health. The long fermentation process of making sourdough releases nutrients like iron, zinc, magnesium, antioxidants, folic acid and other B vitamins. The natural way this occurs allows our bodies to process them more easily.
So why is Sourdough bread healthier than ordinary bread? ... This prevents the effects of the phytic acid and makes the bread easier for us to digest. These phytic acid molecules bind with other minerals, such as calcium, magnesium, iron and zinc, which make these important nutrients unavailable to us.
I'm not gonna lie, I LOVED eating bread with every meal. I couldn't even believe the scale had not moved when I returned home after eating all that bread, but it DIDN'T.
Now, you have to realize:
1) they do not eat processed foods (sugary products)
2) they love their olive oil, put it on EVERYTHING
3) eat very little meat
4) eat TONS of vegetables
So, if you're considering adding sourdough bread into your daily diet--do it like the Italians do!
