Happy Friday!!  I’m here to HELP YOU!!  I got this!!  Now it’s crunch time–you literally have 2 more weekends until CHRISTMAS are you stressing? You’ve got 3 Christmas parties to go to, band concerts, potlucks at work, gatherings with friends, no sleep, no exercise and more alcohol and sugar in your system now then you’ve had in 3 months.  You’re pooped, out of time, out of money and still have SO much to do!  HOW will it get done?  Here’s how:

  • Prioritize:  make a list of absolutely everything you have to do 
  • Then only put 3 items from your list on your DAILY to do list
  • You’ll actually FEEL more accomplished just by doing those 3 things and will PROBABLY get even more items completed!
  • Drink water!!  Water is life giving–no matter what else you do or don’t do–drink water!!
  • BREATHE!  Slow down and take 3 deep, thoughtful breaths.  Gather your wits and start again.

I know there are days you JUST don’t feel like working out.  I get it–I really do.  And I know some days you don’t even THINK about working out.  In fact, you can’t even REMEMBER the last time you worked out!  I hear you…that used to be me.  I was SO out of shape I couldn’t even remember what it was like to feel good in my own skin, let alone feel good at all.  I had no energy, no motivation, no love for life.  I was stuck.  I was at a health crisis…I bottomed out my thyroid and I needed to make some serious changes.  So I did…  I hired a coach and I made some major lifestyle changes!   Was it hard?  Yes!   Was I desperate?  Yes!!  Was it worth it?  YES!!!  Was it the best thing I ever did?  YES!!!  I always say:  “if it was easy, EVERYONE would do it!”  You can quote me om that!  Just DO IT!  All you have to do is REACH OUT!!

INGREDIENTS

  • 2 Tbsp. olive oil
  • 1 medium onion, chopped
  • 1 large red bell pepper, chopped
  • 5 cloves garlic, minced
  • 4 tsp. chili powder
  • 1 (16 oz.) bag of brown lentils
  • 2 (14.5 oz.) cans no-salt diced tomatoes
  • 1 bay leaf
  • 2 (32 oz.) cartons vegetable stock or chicken stock
  • 1/3 cup fresh chopped cilantro
  • sea salt and fresh ground black pepper
  • Optional toppings: sour cream, cheddar cheese, croutons, tortilla chips, avocado
  •  

INSTRUCTIONS

  1. In a large heavy duty dutch oven, heat olive oil over medium heat. Add onion and red bell pepper; saute the vegetables for 8 minutes or until soft and lightly browned, stirring occasionally.
  2. Stir in garlic and chili powder; cook for 1 minute.
  3. Add lentils, tomatoes, bay leaf and stock. Season with salt and ground black pepper, to taste. Bring to a boil, lower the heat to medium-low and simmer, partially covered for 30 minutes or until lentils are tender. Remove from the heat and discard the bay leaf.
  4. Transfer 3 cups of cooked chili into a food processor and process until pureed; add the pureed chili back into the remaining chili and stir to combine. Taste for salt and pepper.
  5. Stir in cilantro and serve.

Feeling the pressure of the holiday already?  Well, that’s TOTALLY normal.  But don’t let it SQUASH you and steal your energy!  Here are some things you can do to alleviate the pressure.

  • Get your sleep!  Don’t sacrifice that precious sleep for ANYTHING
  • Drink your water!  Don’t get dehydrated, it steals your energy

Here in little old Helena, MT we were fortunate enough to take in God’s beauty one night while driving home.  The picture’s God paints for our minds IF we just take a moment to enjoy are breathtaking.  How can something so beautiful speak so many words.  I was immediately filled with gratitude for:  my eyesight, my health, my mind, my friends, my family, my home, my LIFE (just to name a few things).  God gently reminds me to be mindful.  He speaks to my senses and I’m always reminded to GIVE THANKS.  Please share YOUR gentle reminders!!  I want to see….
